Message polishing eliminates the rough texture of the ports. You want at least some amount of boundary layer turbulence to keep the fuel from filming out on the surface of the port. It looks rougher in the pictures than it really is - the camera picks up the contrast really well and it makes it look that way. But that's the only thing I can account it to - I had no idea it would have made such a noticeable difference.
